Who doesn’t love a good pasta recipe? This Extra Creamy Tortellini recipe is SO good and reheats well. This recipe takes under an hour and makes roughly 5-7 servings.
Ingredients
- 20 oz tortellini
- 1/2 cup diced white onion
- 1 tbsp minced garlic
- 8oz sliced mushrooms
- 1/4 cup butter
- 3 cups heavy whipping cream
- 1 cup grated parmesan cheese
- 1 cup shredded cheddar
- 1 tbsp pepper
- 1.5 tsp salt
- 1 tbsp oregano
- 1 rotisserie chicken (shredded)
- 1-2 tbsp of all-purpose flour
- Optional: chives for garnish
Recipe
- Make the tortellini and start making the sauce while it’s boiling.
- In a separate pot – add the butter, onion, garlic, and mushrooms together. Cook until the onions are translucent and the mushrooms are sautéed.
- Add in the whipping cream, cheeses, pepper, salt, and oregano. Then, add the shredded chicken and stir in 1-2 tbsp of flour until the consistency is to your preference. (See Special Notes below for tips.)
- Once the tortellini is finished cooking and the water has been drained, stir the tortellini into the sauce pot until all ingredients are combined.
- Garnish with chives and enjoy!
Special Notes
- Tortellini – I use the Buitoni brand of refrigerated Chicken & Roasted Garlic tortellini. Feel free to use whatever brand or flavor that you like most.
- Flour – I add 2 tbsp of flour into my sauce to thicken it up. I suggest adding 1 tbsp at a time while stirring it consistently. Be patient and give the flour some time to settle before adding more.
