Extra Creamy Tortellini Recipe

Who doesn’t love a good pasta recipe? This Extra Creamy Tortellini recipe is SO good and reheats well. This recipe takes under an hour and makes roughly 5-7 servings.

Ingredients

  • 20 oz tortellini
  • 1/2 cup diced white onion
  • 1 tbsp minced garlic
  • 8oz sliced mushrooms
  • 1/4 cup butter
  • 3 cups heavy whipping cream
  • 1 cup grated parmesan cheese
  • 1 cup shredded cheddar
  • 1 tbsp pepper
  • 1.5 tsp salt
  • 1 tbsp oregano
  • 1 rotisserie chicken (shredded)
  • 1-2 tbsp of all-purpose flour
  • Optional: chives for garnish

Recipe

  1. Make the tortellini and start making the sauce while it’s boiling.
  2. In a separate pot – add the butter, onion, garlic, and mushrooms together. Cook until the onions are translucent and the mushrooms are sautéed.
  3. Add in the whipping cream, cheeses, pepper, salt, and oregano. Then, add the shredded chicken and stir in 1-2 tbsp of flour until the consistency is to your preference. (See Special Notes below for tips.)
  4. Once the tortellini is finished cooking and the water has been drained, stir the tortellini into the sauce pot until all ingredients are combined.
  5. Garnish with chives and enjoy!

Special Notes

  • Tortellini – I use the Buitoni brand of refrigerated Chicken & Roasted Garlic tortellini. Feel free to use whatever brand or flavor that you like most.
  • Flour – I add 2 tbsp of flour into my sauce to thicken it up. I suggest adding 1 tbsp at a time while stirring it consistently. Be patient and give the flour some time to settle before adding more.
