Buffalo Chicken Chili

Ingredients:

  • 1 rotisserie chicken
  • 32oz chicken broth
  • 8oz block of cream cheese
  • 1/2 cup of sweet baby ray’s buffalo sauce
  • 2 14.5oz cans of diced tomatoes
  • 1 can of white North African beans
  • 1 cup shredded sharp cheddar cheese
  • 2 ranch packets
  • 1 cup diced white onion
  • Green onions (optional, for garnish)

Recipe:

  1. Cook the white onion in a pan with olive oil until onions are translucent. While doing that, shred your rotisserie chicken.
  2. Add the white onions and the rest of the ingredients into a pot except the green onions.
  3. Simmer on high for a few minutes. Turn the heat to low and cook for an hour.
  4. Garnish with chopped green onions.
